Gluten-Free Shortcake Biscuits

I GOT YOU!
If you are like me, once in a while you crave a sweet, wholesome treat during your morning coffee break. Well, after a few kitchen tests, I think I figured out a good recipe that you might want to try. It is dense, just like most gluten-free baked goods, but I promise its sweetness and flavor will satisfy your sweet tooth. I think it is perfect, and I hope you enjoy this recipe as much as I do!
HERE IS THE RECIPE
It makes 8-9 biscuits!
Ingredients:
1 Cup of Almond Flour
2 Cups of Cassava Flour
1 Cup of Coconut Flour
1 1/2 Tsp of Xanthan Gum
1/4 Tsp of Baking Soda
1 Tbsp Truvia (sweetener)
1/4 Tsp of Salt
1 Star Anise
1/2 Tbsp Fennel
1 Cup of Soy Milk
1/3 Cup of Cold Butter
1/2 Tsp of Almond Extract
1 Egg
Step 1: Use a coffee grinder to pulverize the spices.
Step 2: Use a food processor to mix all dry ingredients with spices then start adding the milk, cold butter, and almond extract.
Step 3: Make 8-9 balls (flatten the bottom and top). Use wax paper on a baking tray and cook at 425℉ for 17-mins.
Step 4: Turn off the oven and let the biscuits sit inside the warm oven for 5-8 more minutes.
Step 5: Cut and enjoy with your favorite jelly and nut butter!
