Gluten-Free Banana Chocolate Chip Cookies (No Sugar Added)
Baking Away!
Perhaps, this is going to sound weird. Maybe, it is a bit out of place but, honestly, all I want to do during those awful days of the months is to bake away. Why!? I don’t know! Someone, please tell me that this is normal women’s behavior. I really try to come up with treats that aren’t awfully unhealthy BUT that are good enough to satisfy my sweet tooth. If you are looking for something like that, you will probably love these GF cookies. They are soft and sweet yet they don’t have added sugar other than some semi-sweet chocolate chips. I promise they will be all you need to be happy on a Monday night after an 8-hour workday!
Ingredients
3 Ripe Bananas
2 Tbsp Madagascar Vanilla Extract
1 Cup Rolled Oats Partly Pulverized in the Food Processor
1/2 Cup Whole Rolled Oats
1 1/2 Cup Almond Flour
1/2 Cup Sweet White Rice Flour
1 Cup Open Nature Gluten-Free Dry Pancake Mix
1 Tbsp Xanthan Gum
1/3 Cup Semi-Sweet Chocolate Chips
2 Tbsp Smart Balance Original Buttery Spread
Preparation:
In desperate situations (coming back home after an 8-hour workday), you serve yourself some wine and get all the ingredients out. First of all, you have to taste those semi-sweet chocolate chips to ensure survival. What if they are bad?! You gotta prevent someone else from dying... WE GOOD PEOPLE! After this, you open the bananas and mash them really well. Add the vanilla extract and the Smart Balance to make the mashing a little easier.
I use a potato masher for this dough preparation. I find that using this utensil saves me some time —-yeah, time that I would have spent cleaning a sticky food processor after making a dough with it. Anyways, mash away. Play a podcast too— I love Morbid or Crime Junkie. Don’t judge; it is Monday. Drink the wine. Add the dry ingredients in a separate container and combine well before you integrate them into the banana pure that you just made. Who invented 8-hour workdays by the way? It does not matter how much you love your co-workers you just want to be home and enjoy the real good life with your chickens and dogs!
At this point, dough is ready. It really does not take much. Now, pre-heat your oven at 375 °F. Get your baking sheet ready — I usually place parchment paper on it, so I don’t have to add any grease and make the cleaning easier. Use a big spoon to make 10 cookies. Yes, you are going to give them the cookie form, because they are lazy. They won’t change much while being baked. So make 10 good-looking cookies and place the sheet in the center of the oven.
Bake for 25 mins!
If you want to bake them for a lil longer, that’s fine too. I just like them soft!
After 25 minutes, they are ready. Eat them all!!! No, just kidding. That’s not civil — you have to share them with your family. Be nice! If it helps, these precious cookies have lots of calories.
