Homemade Gluten-Free Pizza Dough

Gluten-free people, unfortunately, have a hart time finding good, thick pizzas. In my personal experience, everywhere I have ordered GF pizzas, the crust is thin and quite hard to enjoy. Sometimes, they have a cardboardy look and taste. It is disappointing. Given that, once in a while, I crave my own thick, cheese, chunky, chewy pizza. I am so very proud of the taste and texture of my pizza. My hubby loves it, and he is not even a GF kind of guy!
Here is my recipe from the dough to the pizza!
Dough ingredients:
1 Cup Almond & Oat pulp (see Almond & Oat Milk recipe)
1 Cup Chickpea Flour
1 Cup Cassava Flour
1/3 Cup Yellow Cornmeal
1/4 Cup Sweet Rice Flour
2 Tbsp Xanthan Gum
1/2 Tsp Salt
2 Tbsp Extra Virgin Olive Oil
1 ¼ Cup Water
1 Tbsp Red Chili Pepper Flakes (optional but gives the dough an amazing flavor!)
1 1/4 oz. Packet of Quick Rise REDSTAR
Dough Making:
Prepare the quick rise REDSTAR packet following its instructions. Combine all dry ingredients and mix well. Add the REDSTAR and all the other ingredients. Mix and fold until dough looks like the picture below (15mins approximately). To prevent the dough from sticking to your hands, oil them before you have to manually work the dough.
Now, here is how I make an IMPOSSIBLE taco pizza! This is just a once in a while treat given the IMPOSSIBLE is super processed/not good for you.
Pizza ingredients:
½ Package of IMPOSSIBLE Ground Beef
½ Package of the Gluten-free La Tortilla Factory Classic Taco authentic sauce
½ Cup of a diced red onion
2 Handfuls of spinach (You need to add the greens!!!)
½ Cup of Pace The Original Picante Sauce
1 ½ - 2 Cups of cheese (you could use vegan cheese or regular cheese; whatever you prefer will work as the taste will be amazing anyways).
Pizza Preparation:
Get your pan out and start cooking the IMPOSSIBLE meat, onions, mushrooms and spinach with the classic taco sauce. Low to medium heat is fine until the meat looks fully cooked and there is no visible grease. If there is still grease, let it dry out at a lower heat so your pizza does not get soggy.
When you are ready to prepare the pizza, add and spread your Pace salsa on the pizza dough. Top the dough with the meat, mushrooms, onions and spinach. Add the cheese and fold the edges of the pizza for a thicker border.
The cooking:
Pre-heat the oven at 425°F. Once ready, place the pizza in the center of the oven, and let it cook for 35 mins. After 35 mins, turn the oven off and let it sit for 5-10 mins. Take it out and ENJOY!
